I'm interpreting it as mostly a metaphor for her life back in missouri, and how growing up in the midwest shaped her into the artist (and person) she is today. how desperate she was to escape the life she was living to chase her dreams etc. pretty sure she used to be a receptionist at a hair salon which we can also see glimpses of in the video!

Pretty much this! I read all the set-up minus the dance floor one as her life growing up since she's often mentioned working as a salon receptionist. Then, the dance floor set up is her in pop star mode.
