From my experience, Portugal is the most underrated Western European country.  (I have not visited Eastern Europe enough to rank against those countries).
It is beautiful, warm, less expensive, and has great food.

I haven't, but I've heard great things about Albania! I don't know which type of traveler you are, but I love road trips and places with a lot to offer while not being huge international tourism destinations, and Albania sure is near the top of my bucket list. Also very budget-friendly.

South of Italy: Either Amalfi/Sorrento coast which is where I live (close enough), you can go to Capri as well. That's the typical italian vacation everybody dreams of, amazing beaches, towns, views, food, sea etc. Cons: expensive and not easy to get around. If you pick it I can help you plan it :heart2: this is a video I made last year at the end of the summer if you wanna take a look. Otherwise other amazing choices in the south of Italy are: Salento, Sicily, Sardinia, all gorgeous! 

 

Greek islands - cheap, good food, history (depending on where you go) / I've been to Crete and Zakynthos and both were great

 

Spain - I've been wanting to go for ages, especially to Minorca, Formentera, Ibiza and Barcelona (even though the sea is pretty bad in Barcelona)

 

Other interesting choices would be Croatia, Algarve in Portugal and Albania, I've never been but I've heard great things and seen amazing pics! Heard that they're not expensive either, especially Albania.

How do you see going to Corfu by plane and then taking a ferry to Albania? I really don't want to go by ferry or car from south of Italy to Albania, that's a bit too much and a waste of time

The idealised 1950s Middle England is something else that could be found in Spain and does not exist in the UK.
