And typically it's a long process of collecting receipts and accounts. Not sure how "compelling" the evidence must be at your job, to justify a firing, BUT if his tantrum is not sufficient and you want to be reallyyyyy petty, set him up. You probably know the right button to push, get that iPhone ready and let it rip. Only if it is safe to do so, of course. This man sounds unstable so he'll fall right into your trap. This is easier done in writing as well if you exchange words via email/chat. Throwing it out there. Stay safe!
