It depends on what you want. But i would divide it like this:

If you want the traditional shonen anime you have to look at the old and new big 3 along with the father and mother of them all which would be:

1. Sailor moon

2. dragon ball/z/super just skip gt

3 bleach

4. one piece (this is a bit long and a commitment)

5. Naruto

6. jujitsu Kaisen

7. my hero academia

8. Demon slayer

if you want short 12 episode animes with great storys, i love that witchy anime category, so i would say:

1. wedding peach

2. pretear

For story purposes (other than anime mentioned above) the following are the best:

1. Full metal alchemist brotherhood (and not the original)

2. Gundam Seed (but all gundams are good).

3. Attack on Titan

4. Death Note

5. Romeo x Juliet (you will cry)

6. Angel beats (you will cry harder, saddest anime ever)

7. Hunter x Hunter

8. Case Closed

9. Code Geass

10. Hack! Twilight

11. attack on titan

guilty pleasure to watch once because wtf is this:

1. High School of the Dead

Older animes i have loved but have not seen in forever:

1. Inuyasha

2. cowboy bebop

3. bobobobono bobobobobo (stupid name but remember loving it)

4. Pokemom (duh)

5. Digimon up to season 4

6. Yugioh through 5 ds. Zexal and above is not the tea.

Also honorable mentions:

1. super galz

2. Boys over flowers if you want one of the best high school manga/ relationship animes ever made. There is s reason this anime was made into a live action japanese, korean, and american version.

- Attack on Titan (if you want something complex focused complex in action and politics) ~ if you enjoy this show you could watch Jujutsu Kaisen and Demon Slayer next.

- Death Note (if you want something thrillery and full of plot twists)

- Violet Evergarden (if you're looking for an episodic, comfort show rooted in drama)

- Skip to Loafer (if you want a comfort show but this time it's a rom-com)

- Erased (if you want a different type of thriller/mystery show with an engaging, dark story)

- Sasaki to Miyano (if you want something gay)

Start with the fan favorites/classics like: Death Note, Attack on Titan (!!!!!), Hunter X Hunter (!!!!!!!!!!!), Fullmetal Alchemist (!!!!), Demon Slayer, Promised Neverland, Code Geass, My Hero Academia, JJBA, Jujutsu Kaisen, Spy x Family etc.
And then go from there once you realize what genre or style you prefer.

if you're not afraid to watch something LONG, do Naruto, One Piece or Dragon Ball (they're also classics)

I'm more of a Disney/Studio Ghibli fan when it comes to animation but there are some memorable animes I love and they are:

Bleach

Pokemon

Naruto Shippuden

Full Metal Alchemist

Death Note

Sailor Moon

Dragon Ball

Sakura

Perfect Blue (This is probably my favorite anime movie)

Hamtaro

Pokemon

My Hero Academia

Demon Slayer

Love Me, My Knight

Jojo's Bizzare Adventures

The Rose of Versailles

Kilala Princess

The part of Dragon Ball Z where Future Trunks shows up

It's right after the Freeza Saga (or after Garlic Jr saga if the streaming service includes filler episodes)

Watch "Asobi Asobase" if you want something fun & cute (with the occasional butt laser shooting scenes):
