Bee, but even she changes it up to Bay sometimes and here why (I think):

Generally, it seems that she says "Bay" whenever the pun would be too invisible otherwise.

 

If she said "Bey ready" in writing, we'd all get it. If she said "Be[y] ready" out loud, it wouldn't be so obvious she was also making a reference to herself.

you'd swear Beyoncé was some new artist and hasn't been saying her own name in public, both full and pre-fix, for 25+ years. She also has dressed up as a literal BEE insect half a dozen times. If you are pronouncing it wrong in the year of our lord 2024 then you're just being willfully ignorant.
