I guess they’re technically called rancheros. But it’s a huge part of the culture in rural parts of Mexico and they have their own unique style

of music

 

Not sure of the exact history though on if US cowboys were influenced from

Mexico or vice versa

Cowboys are an actual thing in Mexico, the US and Canada. With some in Argentina and Brazil. 
 

Cowboys were just people that herded cows and other animals in ranches.
