They're trying to copy the Star Wars method of a thousand spinoffs and I really don't see how they make it high stakes now that the most existential threat is gone. Give me Drogon carrying Daenerys to Asshai or somewhere to get revived and then her returning to conquer everyone again, or even go forward to new horizons. There are much more interesting characters and periods to explore in the ASOIAF world than Jon Snow post Season 8.
