I'm not exactly sure if Grenade and Just The Way You Are are 'iconic' by definition, but both being two of the biggest global singles in the 21st Century by a male artist has got to count for something, right?
Time will tell.

Hero will forever be her most "iconic" by this definition, even though she's had more successful songs. All I Want Christmas/Vision of Love/Always Be My Baby give Hero a run, but most non-stans will know and remember, "And then a Hero comes along, with the strength to carry on...." lyric than any other song by Mariah.

Avril's Complicated, Sk8er Boi, and Girlfriend are instantly iconic. My Happy Ending and I'm With You are up there too, I mean, they are still played on Hot AC a **** load

I'd call Party In The USA iconic. It's one of the biggest songs of all time and everyone remembers the pole dance. Plus that social resurgence it had when Bin Laden died.
I'd say The Climb too, but to a lesser extent.

'80s: Holiday, Borderline, Like a Virgin, Material Girl, Into The Groove, Live to Tell, Papa Don't Preach, Open Your Heart, La Isla Bonita, Who's That Girl?, Like a Prayer, Express Yourself.
'90s: Vogue, Justify My Love, Erotica, Fever (cover), Human Nature, Take a Bow, Don't Cry For Me Argentina (cover), Frozen, Ray of Light, Beautiful Stranger.
'00s: Music, Don't Tell Me, Die Another Day, American Life, Hung Up, Sorry, 4 Minutes, Give It 2 Me, Celebration.
'10s: ??? Too early to know.
Before anyone attacks me, I chose these songs because they are her most memorable singles, regardless of why. Some because they're legendary ("Like a Prayer"); Some because they're controversial ("Justify My Love"); Some because they were successful ("Take a Bow"); Some because they were associated with something else, like a Bond film ("Die Another Day") or a tour ("Who's That Girl?").
For whatever reason, good or bad, they are Iconic because they're famous and referenced years later.
